Food


I grew up in New Orleans.  I love to cook.  I love to eat.  Some favorite styles of cooking…

·         New Orleans Creole.  Gumbo, jambalaya, shrimp creole, crawfish etouffee, shrimp remoulade.  Yum.

·         Southern.  Fried catfish, okra perloo, collard greens with spice cornbread, barbeque.  Mmm mmm.

·         Indian.  I do a variety of curries, mostly Indian and Thai (as well as a West Indian seafood curry with mace) and other Indian dishes

·         Invention.  I rarely work from recipes, and so invent lots of things that aren’t easily categorized (but are easily consumed).
Here are two recipes, one for a seafood gumbo and one for a Caribbean seafood curry.

There’s nothing like putting on good music, making a good drink, and cooking up a good meal for Zen contentment with life.
Speaking of drinks, Rum makes a great starting point.  In Hawaii I learned to make a killer Mai Tai, and I’ve adapted the recipe for a Hotel Nacional from the Black Sparrow in Lafayette – the key is homemade ginger syrup.
My other favorite drink is a Pimm’s Cup.  Learned about those in England
