I grew up in

Southern.  Fried catfish, okra perloo, collard greens
with spice cornbread, barbeque.  Mmm mmm.

Indian.  I do a variety of curries, mostly Indian and
Thai (as well as a West Indian seafood curry with mace) and other Indian dishes

Invention.  I rarely work from recipes, and so invent
lots of things that aren’t easily categorized (but are easily consumed).
Here are two
